Tsunami Ramen & Tapas

Every so often, a cheesecake crosses my path that breaks entirely away from tradition — and at Tsunami in Frederick, that’s exactly what happened. After a great dinner here, I decided to try something completely new to the Cheesecake With Jake catalog: a Green Tea Cheesecake, paired with an array of vibrant toppings.

For $8, the portion is on the smaller side, but what it lacks in size, it makes up for in charm, color, and creativity. Presented on a sleek slate-style plate, the slice arrived surrounded by matcha ice cream, whipped cream, fresh strawberries, and a dusting of powdered sugar. It’s more of an experience than a simple dessert — a plate that feels curated rather than casually assembled.

The cheesecake itself leans into its identity:
a creamy, lightly-set filling with a texture closer to mousse or pudding than dense New York–style. There’s a slight jello-like bounce to it, which actually works surprisingly well with the delicate matcha flavor. The taste is mild, earthy, and subtly sweet — a refreshing change from heavier, richer slices.

Worth noting: there’s no traditional crust here. Instead, the dessert relies on the toppings and the unique green tea profile to carry the experience. While I missed the grounding element of a solid crust, the matcha ice cream and fresh strawberries did a great job filling in that role, giving each bite a little added texture and brightness.

The plate’s extras elevate the entire dessert. The matcha ice cream pairs beautifully with the cheesecake, deepening the tea flavor and adding a cool, creamy contrast. The strawberries introduce a fruity pop, and the whipped cream adds a familiar sweetness that rounds things out.

This was my first green tea cheesecake, and while it won’t replace the classics, it absolutely earns its place as a fun, unique, and memorable option — especially if you enjoy matcha or want something lighter after a full meal.

Verdict:

A delicate, refreshing twist on cheesecake with a beautiful presentation and a unique flavor profile. Light, creamy, and playful — though small, it’s a delightful introduction to matcha-style desserts.
